The Hungarian bacon I buy is heavily smoked - it's technically cooked
although I still fry it. I believe it would be safe to eat uncooked. In "the old
country" they used to bring bacon, etc., out to the fields for a meal. I
wondered at the time I read that about not cooking it. Then when I bought some I
saw that it was smoked and figured this is what they did. Another tradition is
putting the bacon on a stick over the fire and holding a piece of rye bread
under with onion on the bread. The hot drippings wilt the onion and the bread
soaks up the bacon fat. Never tired it, but I am tempted to do so sometime. I
guess after a while the outside would crisp up and that would be sliced off
and eaten. Maybe someone who has done this can be more accurate then I. The
Hungarian bacon is really good and I have used the drippings to fry in because
of the unique flavor.
