Thanks for posting the Pons link.

Having had a look at the spread sheet, column N, I think that it's what we
would see on any French register, epse (not epes) is being used as a
diminutive of espouse or wife of.

It comes up regularly as an abbreviation of epouse in French genealogical
mags.
