Don't ya love beets? Enjoy them grated, raw, on salads; or cooked
in just about any way. If you do hope you enjoy this one.
Harvard Beets
1/4 cup (60 ml) sugar
1 T (15 ml) cornstarch
1/2 teaspoon (2.5 ml) salt
1/3 cup (80 ml) vinegar
1 T (15 ml) butter or margarine
1 teaspoon (5 ml) minced onion
3 cups (720 ml) cooked, sliced beets OR 2 16 oz (448 g) cans sliced
beets, drained
In 1-quart (1-liter) saucepan, combine sugar, cornstarch and salt;
slowly stir in vinegar; add butter or margarine and minced onion;
over medium heat, cook until thickened, stirring constantly.
Reduce heat to low; add beets and cook just until heated through,
stirring occasionally.
Makes 6 servings.
