You need to go to your local library (medium-size or better) and look at a
big, fat annual volume called LITERARY MARKET PLACE. This is the trade
directory for the publishing field and it includes subject indexes, among
others. It also has hundreds of display ads.

However, cemetery compilations and such are most commonly published by
county or other local genealogical organizations, so you might try to find a
group like that to sponsor publication.

The commercial genealogical publishers (like Genealogical Publishing
Company, Heritage House, State Line, etc) are going to be more interested in
books of broader scope, naturally. Keep in mind that they have to turn a
profit. Small local publishers will sometimes get into this sort of thing,
but they usually want *history*, not compilations.

You can also go to the genealogy collection at your local library and make
note of who publishes the books there, of the sort you have in mind.

It's also been my experience that local printers -- NOT Kinko's: "real"
printers! -- will generally know who all the small publishers (and
freelancers) are in the area.
