Pumpkin Bread
A great favorite in the South, pumpkin bread utilized the large pumpkin crop
available in the early years of the war.
2 eggs
1 cup of cooked pumpkin, mashed
2 cups of flour
3/4 cup sugar
1/2 tsp. grated nutmeg
Mix the eggs and pumpkin together, then mix in the flour, sugar and nutmeg.
Fold together well and put into a well-buttered 9x5 inch loaf pan. Bake in a
moderate oven (350 F) for about an hour.
