I think I would list them as the sex they were when they were born in the
database, with a note field of the name change. Otherwise, a man born as
John Doe who changes his sex and name to Jane Doe would disappear from the
records without a trace. When Jane Doe dies, I doubt her obituary will say
that she was born John Doe, and someone looking for the death record of John
Doe would not know where to find it if there wasn't a reference somewhere to
Jane Doe.
