In cases of a gender change I would show the gender at birth in that field of
the genealogy file and then in notes I'd indicate the date of the change and
the fact that gender was changed.

PS: Maybe some day genealogy software will be updated to permit a better way
of recording gender changes but I think this would suffice for now.
