For once I don't agree with you.
Sr. stands for the French version of senor, that is -Seigneur-.
The clergy wasn't addressed with this title, it was in the beginning of the
18th century used to adress the landed gentry and later also other people of
importance.
A priest was addresed with Herr.
The custom died out in the beginning of the 19th century.
