Jesse, Hopefully I can be of some help in your trip to Austria and the Czech Republic (Moravia). Austria is not cheap. If you visit Vienna I would suggest staying in Wienerneustadt on the outskirts of Vienna. The prices are all in Euro's and only change money at a bank for the best rate I suggest the Reifeisenbank. Naturally, better prices are away from the larger cities. We found it great to stay with families who rent a portion of their home to tourists.
Now to the Czech Republic Moravia and Bohemia, also not cheap but not under the Euro yet.
If you visit Prague and stay downtown you can expect to pay about the same price as in the US for a hotel. BUT thre are many foreigners who own flats in Prague thet they use occasionally and rent them out to tourists. You can still buy dinner for a family for about 25-30 dollars in great Czech restaurants but expect to pay the price for KFC or McDonalds about double of US price. You can expect to pay less in Moravia. The current exchange rate is 28.7 Koruna to the USD. And again only change money at banks, I would suggest Obchodnibanka
for the best rates and service and free coffee while you wait. Rental cars are best in Austria but I suggest you set it up through a US firm in the US before you leave and pick up the car at the airport when you arrive. If you rent a automatic the price is much more than standard and if you have AC you will pay about 20.USD per day more.
I can provide you with Email addresses of foreigners who rent apartmrnts on a short term basis in and around Prague if you Email me. A one bedroom in Prague should run about 75.USD per day Also, renting a car in the Czech Republic is a waste of money and time parking is impossible and many large cities are closed to traffic during business hours. The Czechs have the best metro we have seen and it costs aboutt 1. USD for around trip. The bus service to Moravia is great and includes meal stops at great Czech restaurants with english speaking drivers. Again a rental in the CZ is a waste of money and your nerves. you can expect it to be warmer and more friendly in May, on average it
certainly is - not a surprise, I guess ;-)
*Accomodation-prices
In general conditions would be the same re. accomodation. What I don't
know is when the high season (high-price) period for hotels does start.
Also depends on the place.
*Accomodation-availability: In some places like for instance
Vienna/Austria there's heavy congress tourism, so at certain times you
may find placing a reservation a bit difficult.

Yes, you'll see those in some places like Poland, Slovakia (with
emphasis on the Eastern parts) and as I believe still in the Czech
Republic (don't know about Hungary). Personally I would select the
companies with the fewest restrictions (naturally) and take all the
insurance I can get. Also - in several of the areas mentioned it's good
advice to have your car only in a hotel garage or a car park with an
attendant.

Don't know too much about B&B in these parts, because as far as I know
you'll not find it too often - for instance not in Austria. There what
you'll find though are places called 'Pension' or 'Fremdenzimmer'. In
general what you'll get there is a room only, and possibly breakfast too
(or not, like with a Fremdenzimmer - which I wouldn't recommend unless
it's in one of the alpine tourism regions). Difficult to judge the
quality of such places beforehand ... better use a guide.

Re. genealogical research, if you need /plan to visit any archives, be
sure to make a reservation in advance. Some of them have waiting
lists... but that's certainly something I needn't tell you ;-)
