I'll take a stab at a few of these. I would think it is referring to
separate animal pens within the barn. While horses may be in stalls, other animal
enclosure are more likely to be called "pens." Enclosures for pigs for
instance would be called pens.

Might the word be poled? This could still indicate fencing with
poles--fence posts.

Might this refer to being chained off--locked under lock and
key--rerstricted access? Or, possibly it could refer to a land claim? I'm not familiar
with this area--whether maybe land was offered to anyone who claimed it if they
improved it or farmed on it at this time? Maybe one acre was being farmed
whereby the crops belonged to the farmer but not the land (tenant farming)--and
the rest was part of a land claim as well as the farmer owning the crops?

These are just guesses or possibilities -- others may have a better answer
for you.
