Off the top of my head:
June Byrne. Handbook for Genealogical Research in Central Florida. Daytona
Beach: Daytona Beach Family History Center, 1999
Allen Morris. The Florida Handbook (year) [This is a series of books that I
think is still being published. I have several of the old ones. Contains
info on state government and officials, judicial system, finances,
legislative dept., names to remember, through the years, origin of place
names, employment stats, etc.]
Joe Adams. The Florida Public Records Handbook: A guide to Florida's Records
Law and useful public information resources. Tallahassee, FL: The First
Amendment Foundation, no year.
If you do a Google search for florida +"research guide" you will get 12,500
hits.
A search for florida +"research guide" +genealogy brings it down to 1,790.
I am in the process of writing something for Duval County (most of it is
still a thought in my mind <g> but I have started the cemetery portion;
maybe in the next few years I will get it finished... Isn't that is what
retirement is for?).
