I suspect there may have been an incomplete transcription of the entry, because from the way he was described in 1841 and 1851, there is no chance that he was actually a "Sheriff" in 1861! The Sheriff, in Scotland, is a senior Judge, and presides over the "Sheriff Court", which is the principal court in each County, and deals with a wide variety of Civil and Criminal matters. He is a trained lawyer or advocate, and will only be appointed to a sheriffdom after a considerable period spent working as a solicitor or barrister. A Sheriff Officer, on the other hand, is a much more lowly individual, whose job is to enforce judgements made by the Sheriff. This obviously overlaps with some of the duties of a policeman. On the 1841 census he was described as a Sheriff Officer & Police Man, on the 1851 as County Police and on the 61 as Sheriff. I would be interested to find out about the various meanings, especially the difference of police and sheriff. In 1841 he would have been about 37/38 years of age according to subsequent censuses.
